Recipe Offers Healthier Alternative

The Moore County Extension Office's Cook Smart/Eat Smart program recommends this chicken dish, which is similar to barbecued chicken but offers a healthier, less expensive alternative to bottled sauce.

Honey-Baked Chicken

3 pounds boneless, skinless chicken breasts

1 tablespoon olive oil

1/2 cup low sodium soy sauce

2 tablespoons ketchup

1/2 cup honey

salt and pepper, to taste

nonstick cooking spray

Preheat oven to 375 degrees. Place chicken in a 9 by 13-inch baking dish that has been coated with nonstick cooking spray. In a bowl, mix together oil, soy sauce, ketchup, honey, salt and pepper. Pour over chicken. Bake in preheated oven for one hour or until sauce is caramelized.
